Exposure to Particulate Matter in Commerical Kitchens

Project Description:

Air pollution is known to be correlated with neurological diseases such as Alzheimer’s and dementia. One common place where people are exposed to high levels of air pollution is kitchens. The main pollutant of interest is particulate matter with a size of 2.5 microns in width (PM 2.5). This pollutant is absorbed into the bloodstream through respiration and can damage nerves when the pollutant is stuck in capillaries that feed nerves. This study aims to demonstrate the high levels of these pollutants in kitchens and the ability of masks to reduce pollution exposure.
